Yawgoog D.O. Cornbread

1/2 cup melted butter

2 eggs

1 1/2 cup milk

1 1/1/2 cup flour

1 cup cornmeal

1 cup brown sugar

tsp Baking Powder

tsp salt

1 chopped jalapeno

1/2 - 1 cup corn (fresh or from a can-drained)

 

mix wet (butter, milk, eggs)

mix dry (flour, cornmeal, brown sugar, Baking Powder, salt)

add wet to dry

add chopped jalapeno and corn

 

pour into a well-oiled 10" Dutch Oven 45 minutes prior to dinner

place 5 hot coals underneath and 16 hot coals on top

1/4 turn every 10 minutes
